Meal planning for Fridays in Lent doesn't have to be a hassle with these 20 minute meal ideas!
1. Garlic Butter Lemon Pasta
Ingredients- 12 oz spaghetti
- 3 tbsp butter
- 3 cloves garlic (minced)
- Juice of 1 lemon
- ¼ cup grated Parmesan
- Salt & pepper
- Parsley (optional)
Instructions
- Cook pasta according to package directions.
- Melt butter in a pan and sauté garlic for 1 minute.
- Add lemon juice and a little pasta water.
- Toss pasta in the sauce.
- Top with Parmesan and parsley.
Ready in about 15 minutes.
2. Black Bean & Cheese Quesadillas

Ingredients
- Flour tortillas
- 1 can black beans (drained)
- 1 cup shredded cheese
- ½ tsp cumin
- ½ tsp garlic powder
- Salsa or sour cream
Instructions
- Mix beans with spices.
- Spread beans and cheese on half a tortilla.
- Fold and cook in skillet until golden.
- Slice and serve with salsa.
3. Caprese Grilled Cheese

Ingredients
- Bread
- Fresh mozzarella
- Tomato slices
- Fresh basil
- Butter
- Balsamic glaze (optional)
Instructions
- Butter the outside of bread slices.
- Layer mozzarella, tomato, and basil inside.
- Grill in skillet until cheese melts.
- Drizzle with balsamic glaze.

Ingredients
- 1 bell pepper (sliced)
- 1 zucchini (sliced)
- ½ red onion

Instructions

- Roast at 425°F for 15–20 minutes.

Ingredients
- 1 package cheese tortellini
- 1 jar marinara sauce
- ½ cup heavy cream
- ¼ cup Parmesan
- Spinach (optional)
Instructions
- Cook tortellini according to package directions.
- Heat marinara in a pan and stir in cream.
- Add tortellini and spinach.
- Sprinkle Parmesan on top.
6. Easy Fish Tacos

Ingredients
- 1 lb white fish (tilapia, cod, or mahi-mahi)
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp garlic powder
- Salt & pepper
- Corn or flour tortillas
- Shredded cabbage
- Lime wedges
- Sour cream or taco sauce
Instructions
- Pat fish dry and rub with olive oil and spices.
- Cook in a skillet over medium heat 3–4 minutes per side until flaky.
- Warm tortillas.
- Flake fish and place in tortillas.
- Top with cabbage, sour cream, and a squeeze of lime.
Optional: add avocado, pico de gallo, or a quick lime crema.
7. Simple Shrimp Scampi

Ingredients
- 1 lb shrimp (peeled & deveined)
- 8–12 oz linguine or spaghetti
- 3 tbsp butter
- 2 tbsp olive oil
- 4 cloves garlic (minced)
- Juice of 1 lemon
- ¼ cup white cooking wine or chicken broth
- ¼ cup Parmesan
- Salt, pepper, and red pepper flakes (optional)
- Fresh parsley
Instructions
